Veggie fried rice

My version of veggie fried rice  you can add any vegetable you have in your fridge. I added fresh shiitake mushrooms cause it gives so much of flavour .Best way to do fried rice is using cold rice.

Ingredients 
3 cup Rice  ( I used yesterday leftover Basmati  rice )
5 fresh shiitake mushrooms   thinly sliced including the stem
1 yellow Capsicum diced in small cubes 
1 carrot
2 inch ginger thinly slice as Julienne
2 garlic clove chopped
3 Tbs spring onion 
2 eggs  (you can opt the egg if you're vegetarian )
3 Tsp soy sauce
1 tbs dark soy sauce 
1 Tsp sesame oil 
 2 Tbs chili sauce


Method: 
1.Heat a wok or large sautĆ© pan over medium-high heat. Add 1 Tbs oil  Scramble the eggs in the pan until cooked through. and set aside.
2.In a pan add 1 tbs  oil to the wok. Saute the ginger, garlic ,  2 tbs scallions and mushrooms stir  until fragrant, about 1 minute.
3.Add the  Capsicum and  carrot and sautĆ© until softened.Add the rice and stir  , then  add dark and light  soy sauce and chili sauce  and toss everything around in the wok until heated through.
4.Add the scramble eggs and stir into the rice ,and  finally add sesame oil and spring onion .
